Ingredients

1 cup
milk - 3 Tbsp flour
- 3.5 ounces grated cheese

butter - salt

Preparation

Step 1:
Dissolve the butter in a pot, then incorporate the flour and mix well.

Slowly pour in the milk, continuously stirring. In case curdling occurs, transfer the mixture to a blender.

Once the mixture becomes thicker, season with salt and pepper before adding the cheese. Stir thoroughly until the cheese melts completely, then remove the pot from the heat source.

Separate the egg yolks from the whites, beat the whites until they form stiff peaks, and then fold the yolks into the mixture. Next, carefully incorporate the beaten whites, ensuring not to deflate them.

Pour the mixture into greased molds, then bake for 20 minutes at 350°F (175°C). Once this cooking period ends, turn off the oven and leave the door slightly open for an additional 20 minutes to prevent the soufflés from collapsing.
